Do I pay per product?
No. The plan belongs to your account and covers as many workspaces as you want, and it is measured in the people who can sign in — contacts, emails and workspaces are unlimited on both plans.
Can I model my own objects?
Up to a point. You can add objects, fields, pipelines and stages of your own. What you cannot do is start from nothing: the person, the account and the lifecycle are already there.
